Quick Chicken Picadillo Chili

Ingredients
  

  • 2 teaspoon cumin ground
  • 2 teaspoon chili powder
  • 1 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 pound chicken breasts skinless boneless, diced into 1-inch chunks
  • 1 tablespoon vegetable oil
  • 1 large chopped onion
  • 4 minced garlic cloves
  • 2 Mexican-style diced tomatoes 14.5 oz. can each undrained
  • 1/2 cup chipotle or medium-heat salsa
  • 3/4 cup Sun-Maid Raisins
  • 1 can 16 oz. drained red or black beans
  • Toppings are optional and include chopped cilantro shredded cheddar cheese and sour cream.

Instructions
 

  • Combine cumin, chili powder, salt, and cinnamon in a mixing bowl.
  • Seasonings should be evenly distributed over the chicken.
  • Heat the oil in a large saucepan over medium heat.
  • Cook for 5 minutes after adding the onion.
  • Stir in the chicken and garlic. Cook, stirring occasionally, for 3 minutes.
  • Toss in the tomatoes, salsa, and raisins.
  • Bring to a boil. Cook for 10 minutes, covered.
  • Add the beans and mix well.
  • Continue to simmer for 5 minutes, covered.
